Summertime recipes – sticky glazed ribs

We’ve got another one of our great summertime recipes for you this week and as long as you don’t mind getting your hands a bit messy when you eat, we think you’re going to love it!

We’re not afraid to say again that we love summer because it means we can have plenty of barbecues and eat lots of food outside that’s been cooked on the grill. The reason you might get your hands a bit messy with our chosen dish this week is because our recipe is for grilled sticky ribs!

We absolutely love the taste of smoky, barbecue ribs but this recipe provides an alternative to barbecue sauce – the glaze for the ribs is made up of a number of ingredients that you might never have thought to put together! Take a look…

Here’s what you’ll need:9th bbq ribs

1 rack of pork spare ribs
2.5l water (more if larger rack)
1 banana shallot, diced
2 garlic cloves, peeled and diced
50g of ginger, peeled and diced
1 chilli, diced
100g of ketchup
100ml of soy sauce
50ml of chilli sauce
50g of black treacle
150g of soft brown sugar

Here’s what you’ll need to do:

  1. Depending on the size of your large pot/saucepan, cut the rack into 2 or 3 pieces so that it fits inside, and place the ribs into the pot and cover with water
  2. Add the shallots, garlic, ginger and chilli in to the pot, along with the ketchup, soy sauce, chilli sauce and black treacle
  3. Bring the pot up to a simmer, then place a lid on it and to cook for about 1 hour or until the ribs are tender
  4. Once tender, remove the ribs from the cooking liquid and set aside to cool, leaving the pot on the heat
  5. Add the brown sugar to the liquor and cook down so that there is about half a centimeter left at the bottom of the pan and it looks like a glaze
  6. Blend the glaze until smooth. Once smooth, place back into the pan and reduce until the glaze coats the back of a spoon
  7. Once the ribs are cool, cut away from the bone so that you have individual ribs and using a pastry brush, paint the ribs with the glaze
  8. Place the ribs on a hot barbecue/grill. After a few minutes turn the ribs over and glaze again. Repeat until glazed to your liking and then serve

The glaze for these ribs sounds delicious! This is a great recipe to put your own spin on – swap a few of the sauces that make up the glaze, you could even add some barbecue sauce in there if you want to, there’s loads of variations you could make!
