Summertime recipes are back!

Summer is here and to us this means great weather, long walks in the fresh air, trips to the beach and… summertime food! Last year we found brilliant summertime recipes that we shared with you each week to help make your summer as delicious as possible – and this year we’re going to do the same again.

The world around us gets more colorful as summer arrives, and so does our food. There are some great summery dishes out there, both savory and sweet, that we’re going to try and make for ourselves – so why not get involved and try them out for yourself as well.

We’re starting off the Summertime Recipes this week with sunshine tiramisu (even the name sounds summery!). Swap chocolate and coffee for almonds, nectarines and peaches in this show-stopping dessert…

Here’s what you’ll need:

2 medium egg, separated
50g caster sugar
250g tub mascarpone
150ml pot double cream
125ml marsala wine
175g pack sponge finger
400g mix of nectarines & peach, stoned & diced
50g crunchy amaretti biscuit

Here’s what you’ll need to do:

1. Use an electric whisk to beat the egg yolks with half the sugar until the mixture is pale and moussey – this will take 3-4 mins.
2. Beat the mascarpone in a large mixing bowl to loosen, then beat in the double cream until just combined.
3. Scrape in the mousse mixture and beat everything together until smooth and light.
4. Clean the beaters, then whisk the egg whites in another bowl until stiff peaks hold on the end of the beaters. Tip in the remaining sugar and beat until glossy and stiff again.
5. Use a big metal spoon to stir a third of this into the cream mixture, then gently fold in the rest.
6. Get your serving dish or bowl ready, then put the Marsala in a shallow plate and dip in a few sponge fingers at a time so they are just soaked but not soggy.
7. Layer half of the fingers evenly in your dish, then scatter over half the fruit. Top with half the cream mixture, then crumble over half the crunchy amaretti biscuits.
8. Repeat the layers, but finish with the cream and save the other half of the biscuits.
9. Cover and chill for a few hours, or overnight.
10. To serve, crumble over the remaining biscuits, then spoon into bowls.
